Easy Breakfast Casserole and Volunteering

This morning we dropped off supplies and handed out water in Concord and Pleasant Grove.  These two areas received massive damage from the tornadoes last week.  It was a heart-wrenching, but an important way to spend the morning.  Everyday griping and bitching just seems so petty and stupid when you see the devastation that has effected so many.  As you know, I am a prolific picture taker...I didn’t take any pictures of the areas we went to this morning.  It just didn’t seem right.  I’m glad we went.  We met some amazing, strong and resilient people. 
Before going out this morning, I felt it was important to have a really good breakfast.  At least my mom always taught me that was important.  So I made a yummy breakfast casserole.  I’m still low carbing it (at least until tonight…and then it is reward carb extravaganza dinner!) and this is a really delicious low carb breakfast.

Ingredients
10 eggs
1 tsp Emeril’s Original Essence
2 tbsp sliced green onion
1 cup spicy sausage, cooked
1 cup grated cheddar cheese
4 oz cottage cheese, rinsed to whole curds remain
8 oz sautéed mushrooms and sweet onion
Salt and pepper, to taste


Preparation
Preheat oven to 375.  Spray glass or non-stick metal casserole dish (8x8) with nonstick spray.  In bottom of casserole dish layer meat, mushrooms, onions and cheese.  Mix eggs with Emeril’s Original Essence, salt and pepper until whites and yolks are well combined.  Add cottage cheese to egg mixture and pour over meat/cheese mixture.  Stir gently with a fork so that all ingredients are evenly distributed in the eggs.  Cook for 25 minutes.
